Chicken is probably one of the most well-known ingredients for a quick and nutritious meal. While it may not be as classy as wagyu beef, it is still a good choice for filling your belly.
Not only it is inexpensive and quite approachable in every way imaginable, but chicken is also a very healthy ingredient to have in your meals. It is incredibly rich in protein, which says enough. What’s more, in the era of mental health care, an important thing to notice is that the chicken is also a natural anti-depressant!
The best part of incorporating chicken into your meal plan is that it is super quick to prepare. If you buy two skinless and boneless chicken breasts, you can have them ready to eat in about 8 minutes. Still, the taste might be bland, and the overall experience might not be enjoyable enough.
It doesn’t have to be that way, though. If you are prepared to dedicate fifteen more minutes to cooking and a couple of other ingredients, you could be in for a treat. If you are lacking in ideas, here are our five, extremely simple recipes, to kick your next chicken-based dished up a notch.
Perfect Chicken Alfredo
For starters, chicken alfredo is a simple dish, a bit of an upgrade from fettuccini alfredo. The original is one of the most popular pasta dishes, and for a good reason. By adding to that some delicious chicken, you get an incredible meal which you will always turn to in times of hunger.
If you have never prepared fettuccini alfredo before, don’t worry. The recipe is rather simple to ease you into it.
You should start with the chicken. Use two boneless and skinless chicken breasts, season them with salt and pepper, and cook them on medium-high heat. It should take about ten minutes, per side, and you can tell that the chicken is ready once it looks golden. Once done, let it sit for several minutes, then slice it.
Next, you are going to work on the sauce and fettuccini. Into the same skillet you used, add one and a half cup of whole milk, the same amount of low-sodium chicken broth, and two minced cloves garlic. Bring the ingredients to a simmer, then add the fettuccini and stir it frequently. It will take about ten minutes until the fettuccine is al dente.
When that happens, you will want to stir in half a cup of heavy cream, and one cup of freshly grated Parmesan. Stir it until the sauce thickens. Once that happens, remove it from heat, and add the sliced chicken. It is ready to be served! Garnish it with fresh parsley, for an additional treat to your taste buds and to make it more eye pleasing! Enjoy!
Having chicken in your tortillas is nothing new. Rather, it is probably something you have been enjoying for quite some time when having Mexican food for dinner. So we thought to include it in these recipes so that you know how to prepare it yourself.
First, you want to marinade your chicken. Start with marinade by finding a large bowl, and in it add half a cup of oil, lime juice from about three limes, some cumin, and half a tablespoon of red pepper flakes. Whisk it together and then add the chicken, toss it until it is coated.
You want to leave this mixture in the fridge, at least for half an hour. If you have important stuff to do in the meantime, you can leave it there for up to two hours. Then, you should cook it, of course. In a large skillet, over medium heat, cook the chicken about eight minutes per side, until it turns golden. When it is done, wait a bit until it chills, and then slice it into thin strips.
In the same skillet, add three thinly sliced bell peppers and one sliced large onion. Cook them until they are soft, which shouldn’t take more than about five minutes. When it is prepared, add the sliced chicken, and you want to toss it all until combined. It is done!
You can, and should, serve it with tortillas. Make sure to warm them up a little bit, but don’t overdo it! You don’t want your tortillas crunching and crumbling while you are trying to enjoy these delicious wraps.
White Chicken Chili
You are probably thinking of chilli every now and then. Still, you might have put this thought aside with the lack of a good recipe for it? Here is the one with chicken, so that you can take a well-deserved break from the traditional chilli, while still enjoying this delicious dish! It is very simple, yet effective, and delicious!
First, we should start by preparing the ingredients. Slice a small yellow onion, mince one jalapeno and two cloves garlic. Put it in a large pot, with the preheated oil, and cook until soft. This will probably take about five minutes. Then, add half a tablespoon of oregano, the same amount of cumin and the minced garlic. Cook for about a minute, until fragrant.
Now, add two cans of green chilli, three boneless chicken breasts cut into thirds, and add five cups of low-sodium chicken broth. You would want to season all this with salt and pepper, of course. Then bring to a boil, cover the pot and reduce the heat, letting it simmer for about fifteen minutes. The chicken should be soft and tender.
Now, you don’t want to serve those huge chunks of chicken. Take them out of the pot and tear or cut them into tinier bits. You can use the knife, but considering that it should be very soft and very hot by now, you can also shred it with a couple of forks.
Put the shredded chicken back to the pot, and add two cans of white beans. You should have drained the beans and rinsed them first. Add one and a half cup of frozen corn. This will take some time to cook, so bring it to boil, and let it simmer afterwards on medium heat for about ten minutes. Remove from heat and whisk in half a cup of sour cream! Good to go!
Now, you should serve it in smaller cups if you are expecting company. Use cilantro to garnish it, some cheese, and make sure that you add the crushed tortilla chips as the cherry on top!
Creamed Spinach Chicken
We are going really healthy with this one. Filled with spinach, that contains vitamins and minerals your body enjoys, combined with the benefits of eating chicken, this one is a real health kick! Still tasty, though, so you won’t notice the healthy part of it.
To start with, use four boneless chicken breasts and season them with two tablespoons of paprika, some salt and pepper. Again, cook each side for about eight minutes, and remove from the skillet.
Now, in the remaining oil, cook one medium yellow onion, chopped of course, until it is soft. Add two minced cloves garlic, and cook for another minute. Now add to it ten ounces of baby spinach. Don’t put them in all at once. Rather, add them in batches, and cook until it wilts.
When that happens, the tasty part comes into play. Add to it a cup of heavy cream and three-quarters of a cup of chicken broth at this point. Simmer it for about three minutes. Then add one cup of mozzarella and half a cup of parmesan. When the cheese melts, return the chicken into the skillet, and simmer for five minutes. Your dish is ready!
Heading to another continent for this recipe, bringing it up for several different levels. With quite a number of ingredients, this chicken dish is about to create a firework of tastes in your mouth!
Start with the chicken, as usual. You want to cut it into small cubes, and season it with salt and pepper, before tossing it into a large skillet. On a bit of heated oil, cook them over medium-high heat for about five minutes, or, until it turns golden. In the meantime, chop one red bell pepper, and then add it to the chicken. Cook this mixture together for an additional three minutes, until the pepper is just tender.
In a small saucepan, you should combine three-quarters of a cup of pineapple juice, to give the fireworks the initial spark. Add to it one-quarter of a cup of low sodium soy sauce, the same amount of brown sugar, and two tablespoons of hoisin sauce. Add to the mixture two cloves garlic and half a jalapeno, which you have previously minced. Bring everything to a boil.
Now you need the sauce to thicken, so it is time to make a slurry. Take a small bowl and whisk together two tablespoons of water and cornstarch each to combine them. When done, add it to the saucepan, and whisk it in. Keep cooking until it is thick enough, which will take about five minutes.
Combine the chicken with the sauce by pouring the sauce over the chicken. Let this delicious combo simmer for a few minutes, and then add one cup of pineapple sliced in cubes together with a quarter of a cup of cashews.
We suggest serving all this with cooked white rice, and you can also slice some green onions to garnish it on top!
